Our coffees are 100% hand-roasted: We only sell beans that have been gently heated in a drum roaster at a maximum of 240 degrees. Shock roasting in industry at 600-700 degrees in 3-4 minutes destroys much of the valuable flavors. Our roasters take the time to roast the beans for the optimum taste: depending on the variety between 15-25 minutes.
